Remember this post? I have since perfected this recipe. The changes I made are in bold italics.
Crockpot Chicken Parmesan
2-4 boneless, skinless chicken breast halves, (sliced, chicken tender size.
1/2 c. seasoned bread crumbs (I like a high bread crumb to chicken ratio)
1/4 c. Parmesan cheese
1 T olive oil
1 beaten egg
16 oz mozzarella cheese (sliced)
1 jar spaghetti sauce
The Directions:
1. Spread 1 TBSP of olive oil into the bottom of your crockpot.
2. Whip the egg with a fork in a separate bowl.
3. Mix bread crumbs and parmesan cheese in another separate dish.
4. Dip chicken into the egg, then into the bread crumb mixture, coating both sides w/crumbs.
5. Place the chicken breast slices in the bottom of the crockpot.
6. about 2 hours before serving add mozzarella cheese on top on top of chicken.
7. about 1-1/2 hour before serving add spaghetti sauce. Once sauce is hot turn down to warm until you are ready to serve.
8. Cook on low for 6-7 hours or high for 3-4.
Can be served over rice or noodles. It is also great alone!
My Rating: 4.5 Stars (out of 5). Smelled great all day! Tasted great and was very easy.
Modifications: NONE, it's perfect! By using seasoned bread crumbs I didn't need to add any other seasonings to the bread crumbs and it saved me a few moments in the kitchen. Waiting to add the sauce until later made a HUGE difference in taste and texture.
